Heat the olive oil in a Dutch oven over medium-high flame. Once hot, sauté the parsnip, carrots, and scallions until just tender.

Next, throw in the herbs and garlic; continue to cook an additional 2 minutes or until they are aromatic. Pour in the vegetable broth and tomato paste.

Add the beans and bring to a boil; immediately turn the temperature down to low; let it cook for 13 to 16 minutes. Season with black pepper to taste.

Throw in the fresh kale leaves and continue to cook for a further 2 to 3 minutes. Serve garnished with garlic-and-herb feta cheese. Enjoy!
